Hero is a North Indian fast food kitchen that showcases the chatpatta flavours of Indian street food – hot, sour, sweet, tangy, salty and smoky.
As a way of using leftover tandoori chicken that soon turned dry, dhaba owner Kundan Lal Gujral experimented preserving it overnight in a sauce of tomato and makkhan (butter), giving rise to the famous butter chicken. A staple across dhabas, households and fine dining restaurants, everyone now has their own recipe, playing on the balance between spice and sweetness by adding cashews, methi, butter and cream.
Hero’s take on the iconic sauce is tomato-free, inspired by a street stall in Delhi named Aslam’s. Hero dishes include Butter Chicken Wings marinated in a classic tandoori masala. Blackened up in the tandoori, they are tossed in a sauce of cashew nut, ghee, cream, chaat masala, fenugreek, ginger and coriander. Click here to read the full HERO travel guide.
