Bebek! Bebek! (Duck! Duck!) brings all the colour and culinary drama of Jogya's hawker stands and warungs to Arcade. The twice-cooked crispy duck that Javanese street stalls are famous for forms the focus of the menu. Like in Java, it is served with rice and fresh, limey green chilli sambal made with herbs from founder Luke Farrell's tropical Dorset greenhouses.
Specially-imported pestles and mortars release the essential oils of chillies for sambals, blend nuts, palm sugar and tamarind for rujak dressing, and pound the crispy-fried duck and chicken to create layers of texture.
